Inside the overhaul at one of Burbank’s most in-demand restaurants

The greater San Fernando Valley continues its dining explosion this week, with news of Castaway’s reopening in Burbank on Thursday.

The longstanding hillside stunner by the Speciality Restaurant Corp. team sits well above the Valley floor below, making for sweeping views of the basin and hillside beyond, to say nothing of the golf course next door or the impeccable dining room inside. The restaurant is at the tail end of a $10 million overhaul, and now offers room for some 175 inside, with loads more out on the patio. The total building spans a gigantic 12,500 square feet, and nearly every corner of the restaurant — from the booths in the back to the tables up front — have respectable views of the Valley below.

Chef Perry Pollaci (The Royce) is in as overall chef for the property, overseeing not only the dinner and brunch vibes but any special occasion meals and the inevitable event buyout for the in-demand property. Expect a dinner menu littered with options from duck prosciutto to steak tartare to hefty cuts of red meat, whole grilled fish, pastas, and more. Sommelier Paul Coker is on to cover the drinks from the wraparound bar, with cocktails, wine, and ten taps for beer. The opening menu — which reads like a formatted film script — is below.

Castaway officially opens for dinner on Thursday, May 3, keeping hours from 4 p.m. to 11 p.m. most nights, with an extension to midnight on weekends. Lunch and brunch run Saturday and Sunday from 11 a.m. to 3 p.m. Limited reservations will be available through the website starting tomorrow, with full reservations going live on May 3.
