Hospitality comes easily for Ryan.  Ryan successfully managed two of the highest volume restaurants in the country - in New York and on the Las Vegas Strip - both before he turned 30.  He also reinvigorated the Miami restaurant scene, winning Best Happy Hour and Best Brunch awards numerous times. His attention to detail and innovating programs garnered the attention of celebrities and VIPs,  awarding Ryan and his team the coveted Food and Beverage program for the Miami International Boat Show and Miss Universe Pageant. His passion and perseverance are his trademark qualities and he strives to be an inclusive leader whose team members know their voice will be heard.


Executive Chef 

Pollaci did not choose a career in the culinary arts; the career chose him. With a long family history deeply intertwined with the food world, Perry has a lifelong passion for cooking.

A New York native, Pollaci grew up in restaurant world, pitching in to help out with his parents’ restaurants at a young age. As early as age 12, he found himself bussing tables, dabbling in dishwashing, and even prepping ingredients for mise en place, often taking cues from his grandfather, who himself was a chef. Perry found himself working with some of New York City’s most renowned chefs, including Michael Mina, Richard Farnabe, Caesar Ramirez, John Johnson, and Geoffrey Zakarian. Most recently, Perry was the Executive Chef at The Royce at the iconic Langham Huntington Hotel in Pasadena and Firefly, a staple spot in Studio City.  Perry enjoys spending time with his wife and their one-year-old son and their awesome cat.


Corporate Beverage Director

Paul Coker oversees the cocktail and beverage program, where he assists in the creation of new cocktail concepts and helps in the curation of a world class wine list to complement its inspired menu. Born and raised in sunny Orange County, CA, Coker first got a taste of the hospitality world while working as a dishwasher at the hospital in Costa Mesa where his mother was a nurse, as it meant a free ride to and from work. While attending college, Coker took on a position as a horseshoeing apprentice in Santa Ynez Valley, where he fell in love with wine. 

A Level III Advanced Sommelier, Coker has held key positions at some of the most prominent fine dining establishments in Orange County, including serving as Beverage Manager at Michael Mina’s Stonehill Tavern at the St. Regis in Monarch Beach. Key achievements of his career include two Wine Spectator Grand Awards; being the first SoCal recipient of the 3-Star Award from World’s Best Wine List; Runner-Up Best Cocktail Program from the Orange County Register; and teaching sommelier classes helping over 130 students achieve Level 1 or higher sommelier credentials.

When he is at not at the restaurant, Coker enjoys spending time outdoors, often camping or playing hockey, or continually working to improve his skills by watching TED talks on the food and beverage world or videos from the hospitality focused Welcome Conference.


General Manager

An experienced general manager, Harley DeMyers has a fierce passion for the hospitality industry. For more than 12 years, DeMyers has been leading top restaurants in the Miami Beach area and now he is ready to take on the Los Angeles dining scene. 

His vast operations experience has allowed him to be an assertive yet humble leader. DeMyers has spent the last decade working at some of Miami Beach’s most prominent restaurants, including Rosa Mexicano, Khong River House, and STK.

At Castaway, DeMyers oversees all operations of the new restaurant and event space, from providing high quality service, food and beverage to organizing creative events. With his experience and industry knowledge, DeMyers is able to create memorable experiences for all guests with the restaurant’s beautiful views, superior service, and outstanding dining.
